Ingredients:
  • 7 medium potatoes (red-skinned), washed, peeled, cut into 1cm thick slices
  • 1 large brown onion
  • 5 pieces short-cut bacon
  • 200ml light sour cream
  • Salt and pepper, to taste
  • 50g mozzarella, grated, for topping
Instructions:
  • Preheat the fan-forced oven to 210°C.
  • Boil potatoes in salted water for 10 minutes in a saucepan.
  • Dice the bacon and onion while the potatoes are boiling. Cook over medium heat, stirring constantly to prevent browning.
  • Season the softened mixture with salt and pepper, and then remove it from the heat. Stir in the light sour cream until fully melted.
  • Drain the cooked potatoes and add them to the bacon, onion, and sour cream mixture. Gently toss to coat all potato slices with the mixture, then transfer to a flan dish and sprinkle with cheese.
  • Bake until lightly browned, about 10 minutes.
