Vibrant purple slaw - quick, colorful side dish for any gathering, ready in 15 minutes.
Ingredients:
  • 36.40 gm extra virgin olive oil
  • 40.00 ml red wine vinegar
  • 125.00 ml dried cranberries
  • 1/4 small red cabbage, finely shredded
  • 1/2 radicchio, shredded
  • 2 purple kale stalks, stems and centre veins discarded, leaves shredded
  • 1 small red-skinned apple, quartered, cored, cut into thin wedges
  • 1/2 small red onion, thinly sliced
  • 40.00 ml roughly chopped fresh dill
  • 62.50 ml pecans, roughly chopped
Instructions:
  • In a small bowl, vigorously whisk together oil and vinegar, then season with salt and pepper. Mix in cranberries and let it sit for 15 minutes.
  • In a large bowl, combine cabbage, radicchio, kale, apple, onion, and dill.
  • Right before serving, combine the cranberry mixture with the slaw mixture. Gently toss together and top with pecans before serving.
