Indulgent Rum Raisin Ice Cream Cones featuring Sunbeam raisins for a delightful treat.
Ingredients:
  • 125.00 ml Raisins
  • 60.00 ml rum
  • 500g vanilla ice-cream
  • 400g dark fruit cake, coarsely crumbled
  • 4 waffle ice cream cones
  • 40.00 ml Flaked Almonds, toasted
Instructions:
  • In a small bowl, soak the Sunbeam raisins in rum for 10 minutes.
  • Allow the ice-cream to sit in a large bowl for 10 minutes to slightly soften.
  • Combine the raisins, soaking liquid, and cake with the ice cream, stirring swiftly. Freeze for 20 minutes, or until it reaches a scoopable consistency.
  • Scoop the ice cream into four waffle cones and top with a generous sprinkle of almonds before serving.
