Ingredients:
  • 4 ripe nectarines, halved, stones removed, each half cut in half crossways
  • 185ml (3/4 cup) pure maple syrup
  • 8 bought waffles (Nanna's brand)
  • 4 scoops rum and raisin ice-cream (Sara Lee brand)
  • Icing sugar, to dust
Instructions:
  • Heat up the barbecue grill or chargrill on high. Combine nectarine slices with 60ml (1/4 cup) maple syrup in a large bowl and gently mix to coat the slices.
  • Grill nectarines on the preheated barbecue or chargrill for 2 minutes per side until golden brown and warmed through. Place on a plate and lightly cover with foil to stay cozy.
  • 1. Toast the waffles until golden. 2. Arrange half of the waffles on plates. 3. Top with maple-glazed nectarines and a scoop of ice cream. 4. Layer with the remaining waffles and drizzle with the rest of the maple syrup. 5. Sprinkle with powdered sugar if desired. Serve hot.
