Ingredients:
  • 160ml (2/3 cup) thickened cream
  • 30g (1 1/2 tbsp) butter
  • 32.00 gm brown sugar
  • 1/2 pineapple, peeled, cored, cut into 1cm-thick slices
  • 65g (1/3 cup) raisins
  • 30.00 ml dark rum
Instructions:
  • Whip the cream with electric beaters in a medium bowl until stiff peaks form. Cover and set aside.
  • In a large frying pan over medium heat, melt butter with sugar until the sugar dissolves. Add pineapple and raisins, increase heat to medium-high, and cook for 3 minutes until pineapple is golden. Pour in rum, simmer for 30 seconds until heated through. Serve pineapple on plates, topped with raisins and sauce, alongside a dollop of cream.
