Ingredients:
  • 1 pound potato (3 medium)
  • 1 teaspoon salt
Instructions:
  • Preheat oven to broil.
  • Scrub the potatoes and cut them lengthwise into eighths. Arrange them cut side down on an ungreased jelly roll pan, 15 1/2x10 1/2 x1 inch. Lightly spray with cooking spray and season with half of the salt.
  • Broil the potatoes with their tops about 3 inches from the heat for approximately 10 minutes, or until they start to bubble slightly.
  • Take the potatoes out of the oven. Flip them over, lightly spray with cooking spray, and sprinkle with the remaining salt. Place them under the broiler for about 5 minutes until they are golden brown and tender.
