Ingredients:
  • 1 (18.25 ounce) package moist yellow cake mix
  • 4 eggs
  • 0.5 cup vegetable oil
  • 1 (11 ounce) can mandarin oranges, juice reserved
  • 1 (16 ounce) package frozen whipped topping, thawed
  • 1 (5 ounce) package instant vanilla pudding mix
  • 1 (20 ounce) can crushed pineapple with juice
Instructions:
  • Whisk the eggs until fluffy, then combine with the boxed cake mix. Mix in the oil and mandarine oranges, including both the fruit and its juices. Transfer the batter into a prepared 9 x 13 inch pan.
  • Bake the cake for 40 minutes in a 325°F (165°C) preheated oven, then cool on a wire rack.
  • Prepare the frosting by combining whipped dessert topping, instant pudding mix, and crushed pineapple with its juice. Refrigerate to set, then frost the completely cooled cake.
