Orange salad with jalapeno dressing

Add sunshine to your winter meal with a vibrant and tasty orange salad.
Ingredients:
  • 3 navel oranges
  • 82.50 ml fresh mint leaves
  • 1/4 red onion, finely sliced lengthways
  • 6 pitted Kalamata olives, halved lengthways
  • 70g yoghurt
  • 1 fresh jalapeno chilli, deseeded, finely chopped
  • 1 very small garlic clove, crushed
  • 21.00 gm fresh orange juice
  • Pinch ground cumin
  • Salt
Instructions:
  • Peel the oranges with a sharp knife, making sure to remove the pith. Slice the oranges into thin rounds and beautifully arrange them on a platter.
  • Sprinkle the fresh mint leaves, sliced red onion, and olives evenly over the sliced oranges.
  • In a small bowl, mix together all the ingredients and season with cumin and salt until well combined.
  • Drizzle the flavorful dressing over the crisp salad and enjoy immediately. This versatile salad shines as a standalone dish or as a perfect pairing with chargrilled lamb or chicken.
