Seared Scallops with Jalapeño Vinaigrette

Succulent seared scallops with zesty jalapeño vinaigrette and fresh oranges create a tantalizing dish that doubles as a delicious salad dressing.
Ingredients:
  • 1 large jalapeno pepper, seeded and membranes removed
  • 0.25 cup rice vinegar
  • 0.25 cup olive oil
  • 0.25 teaspoon Dijon mustard
  • salt and freshly ground black pepper to taste
  • 12 large fresh sea scallops
  • 1 pinch sea salt
  • 1 tablespoon vegetable oil
  • 2 oranges, peeled and cut in between sections as segments
Instructions:
  • In a blender, combine jalapeño, rice vinegar, olive oil, and mustard. Blend on high speed until completely liquefied, for 1 to 2 minutes. Season with salt and black pepper to taste.
  • Season scallops with sea salt and cayenne pepper for a spicy kick. Sear scallops in hot vegetable oil until golden on both sides, about 2 to 3 minutes each. Plate the scallops, top with fresh orange segments, and finish with a drizzle of zesty jalapeño vinaigrette. Enjoy the vibrant flavors!
