Quick vegetarian tacos recipe

Delicious vegetarian tacos to satisfy everyone's cravings.
Ingredients:
  • 1 brown onion, finely chopped
  • 400g pkt plant-based mince
  • 40g pkt Mexican Seasoning Mix
  • 400g can diced tomatoes
  • 400g can red kidney beans, rinsed, drained
  • 200g cherry tomatoes, quartered
  • 1/2 red onion, finely chopped
  • 40.00 ml finely chopped coriander
  • 12 corn tortillas, warmed
  • 2 avocados, stoned, peeled, thinly sliced
  • 120g cheddar cheese
  • 120g jalapeno
  • Coriander sprigs, to serve
  • Lime wedges, to serve
Instructions:
  • In a large non-stick frying pan over medium heat, heat 1 tablespoon of oil. Add brown onion and cook for 3 minutes until softened. Add mince and cook for 10 minutes until browned, adding another tablespoon of oil halfway through.
  • Sprinkle the Mexican seasoning into the pan and cook until the mince is coated, about 1 minute. Add the diced tomatoes and beans, then cook and stir for 5 minutes until the mixture slightly thickens. Season to taste.
  • In a small bowl, mix together cherry tomatoes, red onion, chopped coriander, and remaining oil. Season to taste.
  • Arrange the tortillas on serving plates evenly. Top them with the mince mixture, tomato mixture, avocado, cheddar, and jalapeño. Sprinkle with coriander sprigs and serve with lime wedges.
