Fast and effortless dinner for busy nights.
Ingredients:
  • 200g white rice
  • 18.40 gm vegetable oil
  • 1 brown onion, finely chopped
  • 1 red capsicum, seeded, finely chopped
  • 30g Mexican Seasoning Mix Mild
  • 400g can four bean mix, rinsed, drained
  • 250ml canned diced tomato
  • 1 avocado, stoned, peeled, thinly sliced
  • 80ml sour cream
  • 125.00 ml coriander leaves
  • 100g white corn tortilla strips
Instructions:
  • Boil the rice in a large saucepan for 12 minutes or until tender. Drain the cooked rice.
  • Heat oil in a large saucepan over medium heat. Sauté onion until softened, about 4-5 minutes. Stir in capsicum and Mexican seasoning, cook until aromatic, about 1-2 minutes.
  • Combine the beans, tomato, and 3/4 cup (185ml) water with the onion mixture. Simmer until thickened, covered, for about 5 minutes on low heat.
  • Scoop rice into bowls, then add bean mixture, avocado, sour cream, coriander, and tortilla strips. Season to taste before serving.
