Vegetarian tacos bursting with flavor - zucchini, tomatoes, green chiles, and cheese all wrapped in corn tortillas for a fresh and delicious meal.
Ingredients:
  • Extra virgin olive oil
  • 1 cup roughly chopped zucchini or summer squash (1-2 zucchini or squash, depending on the size)
  • 1/2 medium onion, chopped
  • 1 garlic clove, chopped
  • 1 large fresh mild green chile (Anaheim or Hatch), seeds and stem discarded, chopped
  • 1/2 fresh jalapeño chile pepper, seeds and stem discarded, minced (or more, if you desire more heat)
  • Salt
  • Pinch ground cumin
  • Pinch ground oregano
  • 1 small to medium tomato, chopped
  • 4 corn tortillas
  • 4 slices cheddar cheese
  • 1/4 cup crumbled Mexican cotija cheese (a salty, crumbly cheese, you can substitute feta)
  • A few sprigs of fresh cilantro, chopped (okay to include the stems, if small)
Instructions:
  • In a large sauté pan over medium-high heat, heat a couple of tablespoons of oil. Add zucchini, onions, garlic, green chilies, and jalapeño. Season with salt and cumin, ensuring the veggies are coated in oil. Cook until lightly browned, then mix in chopped tomatoes and oregano. Reduce heat to low and let simmer while you prep the tortillas.
  • Heat the tortillas to soften them using either a stove top in a cast iron pan or a microwave, working in batches.
  • For stovetop: Heat olive oil in a large cast iron pan on medium-high. Add tortilla, cook until air pockets form. Place cheese on one side, fold over, melt cheese, and remove from pan. Repeat with another tortilla if pan allows. For microwave: Place paper towel on microwave-safe dish. Arrange 2 tortillas, cook on high for 20 seconds each (40 seconds for both). Air pockets should form. Add cheese, fold tortillas, cook for 10 seconds more or until cheese melts. Adjust cooking times as needed based on your microwave.
  • Fill the tacos with sautéed vegetables, then top with fresh cilantro and crumbled cotija cheese before serving hot.
