Ingredients:
  • 4 (about 200g each) veal chops
  • 72.80 gm olive oil
  • 185g can tuna in oil
  • 2 anchovies
  • 6 capers
  • 42.00 gm lemon juice
  • 123.75 gm mayonnaise
  • 62.50 ml picked parsley leaves
  • 410g can 4-bean mix
  • 1/2 red onion, finely chopped
  • 1 tomato, seeds removed, finely chopped
  • 20.00 ml chopped flat-leaf parsley
  • 20.00 ml red wine vinegar
Instructions:
  • Combine all ingredients in a bowl, then season with salt and pepper to your liking, stirring well to mix. Set aside.
  • Massage the veal with garlic, then generously season with salt and pepper. In a large frypan over high heat, sear the veal for 3-4 minutes per side until it's pink in the center. Rest the chops off the heat before serving.
  • In a food processor, combine tuna, anchovies, capers, lemon juice, mayonnaise, and parsley; process until smooth. Divide the veal chops among plates and top with the sauce. Serve with a side of bean salad.
