Quick pasta sauce for busy nights.
Ingredients:
  • 250g spaghetti, cooked
  • 80ml (1/3 cup) reserved pasta water
  • 40g (1/2 cup) finely grated parmesan, plus extra, to serve
  • 1/2 tsp freshly ground black pepper, plus extra, to serve
  • Extra virgin olive oil, to serve
Instructions:
  • In a hot frying pan, melt the butter then add the spaghetti, stirring to coat. Pour in the reserved cooking water, add parmesan and pepper. Stir and cook for 1 minute until the cheese melts and spaghetti is well coated. Season generously before serving.
  • Divide the mixture equally into serving bowls. Sprinkle additional parmesan and pepper on top, then generously drizzle with oil.
