Ingredients:
  • 750ml bottle dry red wine
  • 357.50 gm honey
  • 1 vanilla bean, split
  • 1 strip lemon zest
  • 3-4 cloves
  • 4 medium quinces, peeled, hard core removed, quartered
  • Thick cream, to serve
Instructions:
  • In a large saucepan over medium heat, combine wine, honey, vanilla bean, cinnamon stick, lemon zest, and cloves. Stir until the mixture comes to a boil.
  • Add quinces to the liquid and simmer over low heat. If the liquid doesn't fully cover the fruit, simply add a splash of water. Cover the fruit with parchment paper.
  • Simmer fruit for 1 1/2 hours until tender. Transfer to a bowl. Increase heat, reduce liquid to 1 cup, and pour over the fruit.
  • Enjoy chilled with a dollop of luscious cream.
