Indulge in fluffy seasonal fruit waffles this winter with your trusty waffle iron.
Ingredients:
  • 2.50 gm ground cinnamon
  • 12.00 gm icing sugar, sifted
  • 300g self-raising flour
  • 2.50 gm bicarbonate soda
  • 10.00 gm caster sugar
  • 90g unsalted butter, melted
  • 435ml buttermilk
  • 220g caster sugar
  • 1 vanilla bean, split, seeds scraped
  • 2 cinnamon sticks
  • 2 quinces, peeled, cut into 8 wedges
Instructions:
  • Place sugar, vanilla pod, seeds, and cinnamon in a pan over medium heat. Pour in 3 cups of water and stir until the sugar is dissolved. Add the quinces, cover, and simmer over low heat for 2 1/2-3 hours until the fruit turns deep red, softens, and the liquid thickens into a syrup. Allow to cool, then refrigerate until needed.
  • Whip cream until fluffy, then gently fold in cinnamon and icing sugar until well combined.
  • In a bowl, sift together flour, baking soda, and a pinch of salt. Add caster sugar, eggs, butter, and buttermilk. Whisk until smooth, then let sit for 10 minutes before using.
  • Heat up your electric waffle iron. Pour in a sufficient amount of batter to cover the base and follow the manufacturer's instructions for cooking. Repeat this process with the remaining batter.
  • Garnish with quince slices and a dollop of fresh cream before serving.
