Quinoa, avocado and grapefruit salad

Flavorful quinoa salad, a nutritious gluten-free side dish.
Ingredients:
  • 250.00 ml white quinoa, rinsed well
  • 2 ruby grapefruit, peeled, segmented
  • 2 navel oranges, peeled, segmented
  • 1 large avocado, halved, thinly sliced
  • 125.00 ml fresh basil leaves, torn
  • 36.80 gm avocado oil (see note)
  • 82.50 ml pepitas, toasted
Instructions:
  • Boil quinoa in a large saucepan for 12 minutes or until tender. Drain, rinse under cold water, and transfer to a large bowl.
  • Combine fresh grapefruit, vibrant orange slices, creamy avocado chunks, fragrant basil leaves, and a drizzle of oil with the cooked quinoa. Season generously with salt and pepper, gently toss the ingredients to marry the flavors. Present the salad garnished with pepitas for an added crunch.
