Quick and easy gluten-free quinoa spinach pilaf, perfect for Thanksgiving or any gathering.
Ingredients:
  • 1 tablespoon unsalted butter
  • 1 small yellow onion, finely chopped
  • 1 clove garlic, minced
  • 1 cup quinoa
  • 1.25 cups water
  • 5 (5 ounce) packages baby spinach
  • 1 tablespoon grated lemon zest
  • salt and ground black pepper to taste
Instructions:
  • In a large saucepan, melt butter over medium heat. Sauté onion and garlic until onion is softened, about 4 minutes. Stir in quinoa and cook for an additional minute.
  • Cover the quinoa mixture with water and bring it to a gentle boil. Lower the heat to medium, cover the saucepan, and let it simmer until the quinoa is tender and has absorbed the water, approximately 20 minutes.
  • Combine the vibrant spinach and zesty lemon zest into the fluffy quinoa; season generously with salt and pepper to enhance the flavors.
