Quinoa and chickpea burgers with Dijon mustard, topped with Swiss cheese for a protein-packed vegetarian meal.
Ingredients:
  • 1.5 cups cooked quinoa
  • 2 tablespoons Dijon mustard
  • 1 egg, beaten
  • 2 grinds fresh black pepper
  • 0.5 cup chickpea (garbanzo bean) flour, or as needed
  • 2 teaspoons vegetable oil, or as needed
  • 2 slices Swiss cheese
Instructions:
  • Combine quinoa, mustard, egg, garlic, and black pepper in a bowl. Stir in chickpea flour until mixture holds together to form 2 patties.
  • In a skillet over medium heat, sizzle patties in oil until golden and fully cooked, approximately 4 minutes per side. Top each patty with Swiss cheese and heat until gooey, about 2 to 3 minutes.
