Cozy quinoa tofu veggie soup, perfect for chilly days.
Ingredients:
  • 2 (14.5 ounce) cans chicken broth
  • 1 cup quinoa
  • 1 (12 ounce) package extra-firm tofu, diced
  • 1 bunch kale, chopped
  • 1 cup sliced carrots
  • 1 small red bell pepper, chopped
  • 0.5 teaspoon garlic salt, or more to taste
Instructions:
  • In a saucepan, bring chicken broth, water, and quinoa to a boil. Reduce heat, then add tofu, kale, carrots, red bell pepper, and garlic salt. Simmer until quinoa is translucent and outer rim has spiraled away from the seed, about 15-20 minutes.
