Irresistible quinoa cooked in savory vegetable broth with garlic, tofu, vibrant veggies.
Ingredients:
  • 1 cup vegetable broth
  • 0.5 cup uncooked quinoa
  • 2 teaspoons olive oil
  • 2 teaspoons minced garlic
  • 0.5 cup broccoli florets
  • 0.5 cup diced firm tofu
  • 0.25 cup vegetable broth
  • 0.25 cup sliced mushrooms
  • 1 cup chopped fresh spinach
Instructions:
  • Bring 1 cup vegetable stock to a boil in a medium saucepan. Add quinoa, reduce heat to low, cover, and simmer for 20 minutes.
  • Once your quinoa is simmering away, warm up olive oil in a skillet over medium heat. Toss in garlic, broccoli, and tofu. Stir briefly, then steam covered on low for 2 minutes. Add 1/4 cup vegetable broth, mushrooms, and spinach. Cover and cook over medium heat until mushrooms are tender and spinach is wilted, approximately 3 minutes.
  • Mix the vegetable-tofu blend into the cooked quinoa, cover, and let it rest for 10 minutes before serving.
