Healthy twist on classic meatloaf: Buffalo meat, quinoa, and sweet potatoes baked to perfection.
Ingredients:
  • 0.5 cup water
  • 0.25 cup quinoa
  • 1 tablespoon olive oil, or as needed
  • 1 small sweet yellow onion, chopped
  • 1 sweet potato, chopped
  • 1 cup chopped kale, or more to taste
  • 0.5 red bell pepper, chopped, or more to taste
  • 1 pound ground buffalo meat
  • 2 eggs
  • 1 tablespoon Worcestershire sauce, or more to taste
  • 1 tablespoon minced garlic, or more to taste
  • 1 tablespoon ketchup, or more to taste
  • 1.5 teaspoons salt
  • 1 pinch dried oregano, or more to taste
  • 1 pinch dried basil, or more to taste
  • 1 pinch dried thyme, or more to taste
  • 1 tablespoon barbeque sauce, or to taste
Instructions:
  • Preheat your oven to 375°F (190°C) and generously grease a 9x5-inch loaf pan.
  • In a saucepan, bring the quinoa and water to a boil. Cover, reduce heat to medium-low, and simmer for 10 to 15 minutes until the quinoa is tender and water is absorbed.
  • In a skillet over medium heat, sauté onion, sweet potato, kale, and red bell pepper in olive oil until tender, about 10-15 minutes.
  • Mix together buffalo meat, eggs, Worcestershire sauce, garlic, ketchup, salt, black pepper, oregano, basil, and thyme in a bowl. Stir in vegetable mixture and quinoa until well combined. Transfer to loaf pan and top with a layer of barbeque sauce.
  • Roast in the oven until fully cooked through, approximately 1 hour. Use a meat thermometer to ensure it reaches an internal temperature of at least 160°F (70°C).
