Buffalo-Style Turkey Tenderloin

Whip up a delicious turkey dinner with veggies in under 30 minutes!
Ingredients:
  • 1 teaspoon olive or vegetable oil
  • 1/2 lb turkey breast tenderloin
  • 1 cup refrigerated cooked new potato wedges (from 1-lb 4-oz bag)
  • 1 medium onion, chopped (1/2 cup)
  • 1/2 medium red bell pepper, chopped (1/2 cup)
  • 2 tablespoons reduced-fat blue cheese dressing
  • 1 to 3 teaspoons cayenne pepper sauce
  • Chopped fresh parsley, if desired
Instructions:
  • Heat oil in a 12-inch nonstick skillet over medium-low heat. Cook turkey covered for 10 minutes, turning halfway through. Add potatoes, onion, and bell pepper. Cook uncovered for about 5 minutes, stirring occasionally and adding water if needed. Ensure turkey is cooked to 170°F and potatoes are tender before serving.
  • In a small bowl, combine the dressing and pepper sauce. Pour the sauce over the turkey mixture, stirring to coat. Simmer on low heat until sauce is warmed through. Garnish with parsley before serving.
