Chef John's Buffalo-style pepperoni pizza with a unique crust and sauce - perfect for game day or any party!
Ingredients:
  • 1 tablespoon extra-virgin olive oil
  • 1 (6 ounce) can tomato paste
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 0.25 teaspoon red pepper flakes
  • 0.5 teaspoon dried basil
  • 0.5 teaspoon dried oregano
  • 1 teaspoon kosher salt
  • 0.5 teaspoon freshly ground black pepper
  • 2 cups water
  • 1 tablespoon olive oil, or as needed
  • 1 (14 ounce) package refrigerated pizza dough
  • 1 pound low-moisture mozzarella cheese
  • 3.5 ounces thick pepperoni slices
Instructions:
  • In a pan, warm olive oil over medium-high heat. Mix in tomato paste, garlic powder, onion powder, red pepper flakes, basil, oregano, salt, and sugar. Cook until the tomato paste caramelizes at the pan's bottom, about 3 to 4 minutes.
  • Combine water in pot, whisk, simmer, reduce sauce to desired thickness over medium heat, stirring occasionally. Remove from heat and set aside.
  • Preheat the oven to 500 degrees F (260 degrees C) and generously grease a sheet pan with olive oil, using your fingers to ensure every inch is coated.
  • Gently shape the pizza dough to fill the pan completely, ensuring it reaches the corners. Should the dough resist stretching, allow it to rest for 5 minutes before continuing.
  • Spread cooled sauce evenly on the dough, extending to the edges. Sprinkle with mozzarella cheese and add pepperoni. Heat on high flame on the stove, moving the pan around until it starts to sizzle, approximately 1 minute.
  • Place in the center of the preheated oven and bake for around 20 minutes until the cheese is golden brown and the pepperoni is slightly charred. Then, slice and enjoy!
