Spicy shredded chicken Buffalo dip - versatile as pizza topping or veggie dip.
Ingredients:
  • 5 ounces shredded skinless rotisserie chicken breast
  • 1 tablespoon salted butter
  • 0.33333334326744 cup Buffalo sauce
  • 1 tablespoon ranch dressing mix
  • 0.5 (8 ounce) package cream cheese, cubed
  • 2 tablespoons chicken broth
  • 1 tablespoon blue cheese crumbles, or to taste
  • 2 (7 inch) flatbreads
  • 0.75 cup shredded mozzarella cheese
Instructions:
  • Cut chicken into delectable bite-sized chunks.
  • In a multi-functional pressure cooker set to Saute function, melt butter. Arrange chicken in pot. Layer Buffalo sauce, ranch mix, and cream cheese cubes on top without stirring. Add chicken broth and cancel Saute function.
  • Seal the lid securely and set the pressure to low following the manufacturer's guidelines. Cook for 8 minutes, then wait for the pressure to build for 10 to 15 minutes.
  • After following the manufacturer's instructions, safely release pressure and carefully unlock the lid. Stir in the blue cheese.
  • Preheat the oven to 375°F (190°C) for a perfectly cooked dish.
  • On a baking sheet, lay down 2 flatbreads. Divide the dip evenly between the flatbreads, then sprinkle mozzarella cheese on top.
  • Bake until the cheese is golden brown, approximately 14 minutes. Slice into 16 pieces before serving.
