Spicy Buffalo chicken cocktail bites made with deli rotisserie chicken and topped with creamy ranch dressing.
Ingredients:
  • 2 cups shredded or pulled deli rotisserie chicken (from 2- to 3-lb chicken)
  • 1 package (8 oz) cream cheese, softened
  • 1 1/2 cups shredded Mexican cheese blend (6 oz)
  • 2 tablespoons Frank's™ RedHot™ Buffalo Wings Sauce
  • 24 wonton skins
  • Sliced green onion tops, if desired
Instructions:
  • Preheat the oven to 375°F and coat 24 mini muffin cups with cooking spray.
  • Combine chicken, cream cheese, 1 cup of Mexican cheese, and Buffalo wing sauce in a medium bowl until fully mixed.
  • Gently nestle 1 wonton skin into each muffin cup, then distribute the chicken mixture evenly among the cups.
  • Bake for 6 minutes. Then, sprinkle 1 teaspoon of Mexican cheese into each cup. Continue baking for 2 more minutes, or until wontons are lightly browned, and cheese is melted. Garnish with green onion tops and serve warm.
