Bake spicy garlic cayenne chicken bites for a healthier twist on Buffalo Wings.
Ingredients:
  • 4 skinless, boneless chicken breast halves - cut into finger-sized pieces
  • 0.25 cup all-purpose flour
  • 1 teaspoon cayenne pepper
  • 0.75 cup bread crumbs
  • 2 egg whites, beaten
  • 1 tablespoon water
Instructions:
  • Preheat your oven to 400°F (205°C) and generously coat a baking sheet with nonstick spray.
  • Combine flour, 1/2 teaspoon garlic powder, 1/2 teaspoon cayenne pepper, and 1/4 teaspoon salt in a bag. Mix bread crumbs with remaining garlic powder, cayenne pepper, and salt on a plate.
  • Coat the chicken pieces in the seasoned flour by giving them a good shake. In a bowl, whisk egg whites with 1 tablespoon of water until frothy. Dip the flour-coated chicken in the egg mixture and then coat well with seasoned bread crumbs. Arrange the coated chicken pieces on a baking sheet.
  • Bake in the preheated oven for 8 minutes, then use tongs to flip the pieces over. Continue baking for another 8 minutes or until chicken juices run clear.
