Transform leftover rotisserie chicken and crispy bacon into a fiery Buffalo chicken sandwich.
Ingredients:
  • 6 slices bacon
  • 0.5 cup mayonnaise
  • 2 tablespoons hot buffalo wing sauce
  • 1 loaf Italian bread, cut in half lengthwise
  • 3 cups shredded meat from a rotisserie chicken
  • 8 slices pepperjack cheese
  • 0.25 cup roasted red bell peppers, drained and sliced
Instructions:
  • Preheat your oven to a toasty 325 degrees F (165 degrees C).
  • Cook the bacon in a large, deep skillet over medium-high heat, turning occasionally, until evenly browned. Drain on a paper towel-lined plate.
  • In a small bowl, mix together the mayonnaise, sour cream, and hot sauce. Spread the mayonnaise mixture on both halves of the bread. Place the chicken on the bottom half of the bread, then add layers of bacon and cheese. Fold the top half of the bread over the bottom to create a sandwich, then wrap it in foil.
  • Bake for 20 to 25 minutes, then top with red pepper slices before slicing and serving.
