Indulge in cheesy Swiss rösti potatoes with veggies.
Ingredients:
  • 1 tablespoon margarine or butter
  • 1/2 cup finely chopped onion
  • 1/4 cup finely chopped green bell pepper
  • 1 (1 lb. 4-oz.) pkg. refrigerated shredded hash-brown potatoes
  • 1/2 teaspoon seasoned salt
  • 1/8 teaspoon pepper
  • 2 oz. (1/2 cup) shredded Swiss cheese
Instructions:
  • In a large nonstick skillet over medium heat, melt the margarine until sizzling. Toss in the onion and bell pepper, sautéing and stirring for 2 minutes until tender-crisp.
  • Toss potatoes with seasoned salt and pepper, ensuring even distribution. Press the mixture firmly into the skillet, cover, and cook over medium heat for 6 to 8 minutes until the bottom is crispy and golden brown.
  • Stir the potatoes in the skillet and press them down evenly and firmly. Cover and cook for 4 to 6 minutes until the bottom is golden brown. Stir occasionally. Keep cooking until the potatoes are fully cooked and mostly golden brown. Sprinkle with cheese, cover, and let it stand for 1 to 2 minutes until the cheese melts.
