Vibrant and quick 20-minute radicchio, watercress, and apple salad.
Ingredients:
  • 3 tablespoons fresh lemon juice
  • 3 tablespoons honey
  • 1/4 teaspoon sea salt, preferably gray salt
  • Freshly ground black pepper to taste
  • 1/4 cup extra-virgin olive oil
  • 1 small head radicchio
  • 1 bunch watercress
  • 1 unpeeled Granny Smith apple
Instructions:
  • Combine lemon juice, honey, salt, and pepper in a skillet. Cook over medium heat, whisking occasionally until honey dissolves. Remove from heat and whisk in olive oil. Taste, adjust seasoning, and let cool to room temperature.
  • Cut the radicchio through the core into quarters, remove the core, and slice the radicchio crosswise into thin ribbons before placing them in a large bowl. Remove the thick stems from the watercress, then combine it with the radicchio. Halve the apple lengthwise, remove the core, and slice the apple crosswise into paper-thin slices using a vegetable slicer. Add the apple slices to the radicchio and watercress. Finally, toss the salad with enough dressing to moisten it.
