4 bunches rocket, ends trimmed, washed, dried
1 radicchio, leaves separated, washed, dried
80ml (1/3 cup) extra virgin olive oil
31.50 gm fresh lemon juice
Salt & freshly ground black pepper

Instructions:

In a big bowl, combine rocket and radicchio. In a small bowl, whisk oil and lemon juice together with a fork. Season with salt and pepper. Drizzle dressing over salad and toss well. Serve right away.
