Transform mundane greens into a vibrant salad with this delectable recipe.
Ingredients:
  • 375g fresh lasagne sheets, coarsely torn
  • 6 (about 400g) Italian-style sausages
  • 1 radicchio treviso, coarsely torn
  • 1 bunch rocket, trimmed, coarsely torn
  • 40.00 ml balsamic vinegar
  • Shaved parmesan, to serve
Instructions:
  • Boil pasta in a large saucepan of bubbling water as per package instructions until perfectly al dente. Ensure thorough draining.
  • Remove the casings from the sausages and shape into balls. Heat a large frying pan over high heat, then add the sausage and cook, stirring occasionally, until browned and fully cooked, about 2-3 minutes. Add radicchio, rocket, oil, and vinegar, toss everything together for 1 minute until heated through. Remove from heat and serve.
  • Combine the pasta with the sausage mixture, gently toss, divide into serving bowls, sprinkle with parmesan, and serve immediately.
