Rainbow candy ice-cream recipe

Make your kids smile with our colorful rainbow candy ice cream recipe.
Ingredients:
  • 2 litres vanilla ice-cream
  • 250g packet shortbread cream biscuits, cut into 1cm pieces
  • 2 x 141g packets Rainbow Nerds (see note)
  • 200g block dark chocolate, chopped
  • 9.20 gm vegetable oil
  • 12 waffle cones
Instructions:
  • Allow the ice-cream to sit in a large bowl for 10 minutes until softened but not melted. Mix in biscuit pieces and 1 packet of Rainbow Nerds. Transfer back to the container and freeze overnight.
  • In a large microwave-safe bowl, melt the chocolate by microwaving on HIGH for 1 minute or until smooth, stirring halfway through with a metal spoon. Mix in the oil.
  • Pour 1⁄2 cup of the remaining Nerds into a small bowl. Dip 2cm of each cone rim in chocolate, let excess drip off, then coat with Nerds. Place on a baking tray lined with parchment paper and chill for 15 minutes until firm.
  • Scoop ice-cream into cones and top with the remaining Nerds. Serve right away.
