Surprise your guests with a stunning rainbow Easter basket cake. Drizzled with colorful icing and candy sprinkles, this moist ring-shaped cake is a dazzling and fun treat for spring celebrations.
Ingredients:
  • 1 box Betty Crocker™ Super Moist™ White Cake Mix
  • Water, vegetable oil and egg whites called for on cake mix box
  • Yellow, red, blue and green food color
  • 1 tub (12 oz) Betty Crocker™ Whipped Fluffy White Frosting
  • 2 cups shredded coconut
  • Betty Crocker™ Decorating Decors® multicolored candy sprinkles
Instructions:
  • Preheat your oven to 325°F and generously grease a 12-cup fluted tube cake pan with shortening or cooking spray. Prepare the cake mix according to the package instructions, using water, oil, and egg whites.
  • Divide the batter into 3 bowls. Add a few drops of yellow food color to one bowl and mix well. Make the second bowl pink by adding red food color. Create purple in the third bowl by adding red and blue food color. Pour half of the yellow batter into the cake pan. Carefully layer the pink batter on top, followed by the purple batter. Repeat the layers without mixing the colors.
  • Follow the baking instructions on the box until a toothpick inserted near the center comes out clean. Let it cool for 10 minutes, then remove the cake from the pan onto a cooling rack. Once completely cool (about 1 hour), transfer the cake to a serving plate.
  • Divide the frosting evenly among 3 small microwavable bowls. Microwave one bowl on High for 5 to 10 seconds. Add a few drops of yellow food color and stir until the frosting is smooth for drizzling. Drizzle the yellow frosting in a back and forth motion over the cake in a striped pattern, ensuring some drips down the sides onto the plate. Repeat the microwaving process for the second bowl, combining red and blue food color to create purple frosting. Drizzle it over the cake in the same striped pattern. Lastly, microwave the last bowl of frosting, add red food color to make pink, and repeat the drizzling process. Decorate the cake with sprinkles to finish.
  • In a resealable food-storage plastic bag, combine coconut with a few drops of green food coloring. Seal the bag and shake until the coconut is evenly tinted. Sprinkle the colored coconut on a serving plate around the cake and in the center to create a "Easter grass" effect.
