Nutritious meal featuring black-eyed beans, high in protein, iron, and B vitamins like folic acid, perfect for moms-to-be.
Ingredients:
  • sweet smoked paprika
  • ½ x 400 g tin of black-eyed beans
  • 4 heaped tablespoons natural yoghurt
  • ½ a bunch of fresh coriander (15g)
  • 2 limes
  • ¼ small cucumber
  • 1 small carrot
  • ¼ small red cabbage (150g)
  • 1 ripe tomato
  • ¼ iceberg lettuce
  • 1 fresh red chilli
  • 2 spelt or wholewheat flatbreads
  • 20 g feta cheese
Instructions:
  • Drain and rinse ½ of a 400g can of black-eyed beans, then toss in a pinch of sweet smoked paprika. Sauté in a non-stick pan over high heat for 10 minutes until crispy. Set aside. Next, blend 4 heaped tablespoons of natural yogurt, half of the leaves from a bunch of coriander, the coriander stalks, and the juice of 1 lime for a simple dressing. Season to taste. Prepare the vegetables by slicing ¼ cucumber, 1 small carrot, ¼ small red cabbage, 1 ripe tomato, ¼ iceberg lettuce, and 1 red chili. Warm 2 flatbreads in the pan for 20 seconds. Fill each flatbread with vegetables, crispy beans, dressing, and 10g of feta. Garnish with coriander and a squeeze of lime. Roll up and enjoy! Great on their own or with leftover grilled meat.
