Colorful rainbow cookies made by layering and slicing vibrant cookie dough log.
Ingredients:
  • 2.25 cups all-purpose flour
  • 0.25 teaspoon salt
  • 1 cup white sugar
  • 0.75 cup butter, softened
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1 teaspoon almond extract
  • assorted colors of paste food coloring
  • 4 tablespoons prepared vanilla frosting
  • 0.25 cup yellow decorator sugar
Instructions:
  • Combine the butter and sugar until light and fluffy. Mix in the egg, vanilla, and almond extracts. Slowly incorporate the flour and salt, beating at low speed until well combined.
  • Divide the dough into 10 equal sections. Mix 4 sections of dough with red paste-type coloring until smooth. Mix 3 sections with green coloring until smooth. Mix 2 sections with yellow coloring until smooth, and mix the remaining dough with blue coloring. Wrap each colored section of dough in plastic wrap and chill in the refrigerator for 30 minutes.
  • Shape the blue dough into an 8-inch log. Shape the yellow dough into an 8x3-inch rectangle and place it on waxed paper. Put the blue log in the center of the yellow rectangle, fold the yellow edges around the blue log, pinch to seal, and roll into a smooth log. Roll the green dough into an 8x5-inch rectangle. Place the yellow log in the center, pinch the edges of the green to seal, and roll until smooth. Roll the red dough into an 8x7-inch rectangle. Place the green log in the center, pinch the edges of the red to seal, and roll until smooth. Wrap the log in plastic wrap and refrigerate for 1 hour.
  • Preheat your oven to 350 degrees F (175 degrees C) and prepare your baking sheets by lightly greasing them or lining them with parchment paper.
  • Slice the log in half lengthwise, then cut each half into 1/4 inch slices. Arrange the slices on baking sheets, making sure they are 1 inch apart.
  • 1. Bake at 350 degrees F (175 degrees C) for 8 to 12 minutes, just until cooked through. Transfer to wire racks briefly. 2. Pipe a small amount of white frosting on one corner of each cookie to create a cloud shape. 3. Sprinkle with yellow decorating sugar and let the frosting set.
