Upgrade your Belgian waffles with fresh blueberries or your choice of syrup or fruit for a delightful twist.
Ingredients:
  • 2 3/4 cups milk
  • 1 package fast-acting dry yeast
  • 1/2 cup sugar
  • 3 eggs, separated
  • 3/4 cup butter, melted
  • 2 teaspoons vanilla
  • 1 teaspoon salt
  • 4 cups Gold Medal™ all-purpose flour
  • Blueberry syrup
  • Whipped cream
  • Fresh blueberries
Instructions:
  • Microwave 1/4 cup of milk in a 1-cup measuring cup for 10 to 20 seconds until it reaches 110°F to 115°F. Stir in yeast and 1/2 teaspoon of sugar until foamy. Heat the remaining 2 1/2 cups of milk in a 4-cup measuring cup for 2 to 3 minutes until it reaches 120°F to 130°F.
  • In a large bowl, use a wire whisk to blend warm milk, remaining sugar, egg yolks, butter, vanilla, and salt until well combined. Add yeast mixture and flour, beating until smooth.
  • In a medium bowl, use an electric mixer to beat egg whites until stiff peaks form. Gently fold into the batter until small white flecks are visible. Cover and allow to stand for 30 minutes, or until the batter begins to rise.
  • Prepare the Belgian waffle maker by spraying it with cooking spray and heating it up. Carefully mix the batter and then pour it onto the waffle maker. Close the lid and bake for about 4 minutes, or until the waffles are golden brown and the steaming stops. Serve your delicious waffles with syrup, whipped cream, and blueberries.
