Deliciously fluffy, heritage cornmeal pancakes recipe passed down for generations.
Ingredients:
  • 1 cup white cornmeal
  • 2 cups boiling water
  • 2 cups all-purpose flour
  • 2 cups milk
  • 2 teaspoons yeast
  • 0.25 teaspoon baking powder
Instructions:
  • Combine cornmeal and boiling water in a large bowl, allowing it to soak for approximately 15 minutes. Then, while it's warm but not hot, mix in flour, sugar, milk, and yeast. Cover the bowl and refrigerate overnight for rising.
  • Combine eggs, baking powder, and salt in the morning. Adjust consistency by adding more cornmeal if necessary. Optionally, reserve a cup of batter for tomorrow's griddle cakes.
  • Preheat a lightly oiled griddle over medium heat. Drop pancake batter onto the hot griddle and cook until golden brown on both sides. Serve immediately with butter and syrup.
