Raisin and orange bread & butter pudding

Tangy dessert pudding with raisins and orange zest is a surefire hit.
Ingredients:
  • 6 slices white bread
  • 40g butter, softened
  • 125.00 ml raisins
  • 4 x 67g extra large eggs
  • 59.40 gm brown sugar
  • 2.50 gm mixed spice
  • 300ml cream
  • 386.25 gm milk
  • 1 orange rind, finely grated
  • Icing sugar, ice cream, extra orange rind, to serve
Instructions:
  • Sprinkle with icing sugar and serve the pudding with a side of ice cream or cream. For an extra burst of flavor, top each serving with additional orange rind, if desired.
  • Preheat the oven to 160C or 140C fan. Butter both sides of the bread, cut it in half, and layer the slices in a greased 8 or 10 cup ovenproof pudding dish (such as a 23cm square baking dish), evenly sprinkling raisins on top.
  • In a large mixing bowl, whisk together eggs, sugar, orange rind, mixed spice, cream, and milk until fully combined. Pour the mixture over the bread and let it soak for 10 minutes.
  • Transfer the pudding mixture into a large baking dish and pour boiling water to reach halfway up the sides of the dish. Bake for 40 minutes or until set. Let it rest for 5-10 minutes before serving.
