Ranch Halibut with Lemon-Parsley Tartar Sauce

Crunchy ranch cracker-coated fish with tangy sauce ready in 25 minutes!
Ingredients:
  • 1 envelope (1 ounce) ranch dressing mix
  • 16 round buttery crackers, crushed (3/4 cup)
  • 2 tablespoons butter or margarine, melted
  • 1 teaspoon lemon juice
  • 1 pound halibut, marlin or other firm fish fillets, about 1 inch thick, skin removed
  • 1/2 cup tartar sauce
  • 2 tablespoons chopped fresh parsley
Instructions:
  • Preheat oven to 450°F. Line a 13x9x2-inch rectangular pan with aluminum foil and spray with cooking spray. Combine dry dressing mix and crackers in a shallow bowl. In another shallow bowl, mix butter and lemon juice.
  • Cut the fish into 4 serving pieces, then generously coat each piece in butter before dredging in the flavorful cracker mixture. Arrange the coated fish in the pan, ready to be cooked to perfection.
  • Bake the fish for 10 to 15 minutes until easily flaked with a fork. Meanwhile, combine tartar sauce, parsley, and lemon peel. Serve alongside the fish.
