Ranch Chicken Casserole with Bacon

Kid-friendly ranch chicken casserole: easy and delicious dinner option.
Ingredients:
  • 1 (12 ounce) package wide egg noodles
  • 1 pound bacon
  • 4 skinless, boneless chicken breasts, cubed
  • 1 tablespoon lemon-pepper seasoning
  • 1 (16 ounce) container fat-free sour cream
  • 1 (10.75 ounce) can condensed cream of chicken soup
  • 1 cup milk
  • 1 (1 ounce) package ranch dressing mix (such as Lipton® Recipe Secrets®)
  • 1.5 cups shredded Colby-Monterey Jack cheese
  • 2 green onions, diced
Instructions:
  • Preheat the oven to 350°F (175°C) for a perfect bake.
  • 1. Bring a large pot of lightly salted water to a rapid boil. 2. Add egg noodles and cook until tender yet firm to the bite, 7 to 9 minutes.
  • In a large skillet over medium-high heat, cook bacon until evenly browned, about 10 minutes, turning occasionally. Drain on paper towels and crumble.
  • In a sizzling skillet, sear chicken seasoned with lemon-pepper until beautifully browned all over, about 5 to 7 minutes. Transfer the chicken to a 9x13-inch baking dish using a slotted spoon.
  • Mix 1/2 of the crumbled bacon with sour cream, soup, milk, and ranch dressing mix until well combined. Pour over chicken and mix in drained egg noodles. Sprinkle the remaining bacon on top, layer with Colby-Jack cheese, and garnish with green onions.
  • Bake until the cheese is gooey and the chicken is cooked through, approximately 30 minutes in the preheated oven.
