Ranch Red Skin Potato Salad

Cheesy bacon potato salad with ranch dressing.
Ingredients:
  • 11 red potatoes
  • 6 slices bacon
  • 1.5 cups shredded Cheddar cheese
  • 3 green onions, chopped
  • 1 (15.5 ounce) container ranch-style dip (such as T. Marzettis®)
Instructions:
  • In a large pot, submerge the potatoes in salted water and bring to a high boil. Lower the heat and gently simmer until the potatoes are tender, which will take approximately 20 minutes. Once cooked, drain and chill in the refrigerator before cutting into bite-size pieces.
  • Fry the bacon in a large skillet over medium-high heat until brown and crisp, about 10 minutes. Drain the cooked bacon on a paper towel-lined plate and crumble it.
  • In a large bowl, mix together the cooked potatoes, crumbled bacon, Cheddar cheese, and green onions. Gently fold in the ranch dip and chill in the refrigerator overnight.
