Rancher's Egg Bake

Elevate your egg bake with zesty taco seasoning, green chiles, and creamy Mexican cheese.
Ingredients:
  • 1 2/3 cups Original Bisquick™ mix
  • 1 tablespoon from 1 container (6.25 oz) Old El Paso™ Original Taco Seasoning Mix
  • 1/3 cup milk
  • 8 eggs, slightly beaten
  • 3 cups milk
  • 1/2 cup chopped drained roasted red bell peppers (from 7-oz jar)
  • 1 can (4 oz) Old El Paso™ Chopped Green Chiles, drained
  • 1 cup shredded Mexican 4-cheese blend (4 oz)
Instructions:
  • Preheat the oven to 450°F. Grease a 13x9-inch (3-quart) glass baking dish generously with shortening or cooking spray. In a small bowl, mix Bisquick, taco seasoning, and 1/3 cup of milk until a soft dough forms. Press the dough into the bottom of the baking dish. Bake for 8 minutes, then let it cool for 30 minutes.
  • Preheat the oven to 350°F. In a medium bowl, whisk together eggs, 3 cups milk, roasted peppers, and chiles until smooth. Pour the mixture over the cooled crust.
  • Cover with foil and bake for 30 minutes. Uncover and continue to bake for 40 to 50 minutes until a knife inserted in the center comes out clean. Sprinkle with cheese and allow to rest for 10 minutes before cutting.
