Indulge in a festive feast perfect for the whole family this Christmas.
Ingredients:
  • 1.5kg beef fillet or beef scotch fillet
  • 36.40 gm olive oil
  • 1 small red onion, finely chopped
  • 4 small roma tomatoes, chopped
  • 1 garlic clove, crushed
  • 4 long red chillies, chopped
  • 90.00 gm brown sugar
  • 42.00 gm lime juice
Instructions:
  • Preheat the oven to 180°C/160°C fan-forced. Place the beef in a large roasting pan and generously rub with oil, then season with salt and pepper.
  • Roast uncovered for 45 minutes to 1 hour for rare or until desired doneness. Cover with foil, cool to room temperature, then refrigerate.
  • Prepare the relish by sautéing oil, onion, tomato, garlic, chili, sugar, and lime juice in a saucepan over medium heat until the sugar dissolves. Bring to a boil, then lower the heat and simmer uncovered for about an hour until the mixture thickens. Allow it to cool before refrigerating.
  • Slice the beef into thick pieces and accompany it with a flavorful relish.
