Rare roast beef with coriander noodles

Transform holiday leftovers into savory herby beef noodle dish.
Ingredients:
  • 200g dried thick rice noodles
  • 1 bunch coriander, roots trimmed, stems reserved
  • 40.00 ml unsalted peanuts
  • 10.00 gm caster sugar
  • 24.40 gm fish sauce
  • 18.40 gm sunflower oil
  • Zest and juice of 1 lime
  • 200g leftover thinly sliced rare roast beef, cut into thin strips
  • 30g desiccated coconut
  • 40.00 ml fried Asian shallots (see note)
  • 1 long red chilli, seeds removed, sliced
  • Extra lime halves, to serve
Instructions:
  • Prepare the noodles as directed on the packet. Drain and rinse under cold water. Keep aside.
  • Place coriander stems and most of the sprigs in a food processor along with peanuts, sugar, fish sauce, oil, lime zest, and juice. Process until smooth and well-seasoned.
  • Combine beef, noodles, coconut, and dressing in a bowl. Portion into individual bowls. Top with shallots, chili, and remaining coriander sprigs. Serve with lime halves on the side.
