Raspberry & lime granita with coconut cream

Cool raspberry granita with tangy lime and a creamy coconut topping.
Ingredients:
  • 500ml (2 cups) water
  • 215g (1 cup) caster sugar
  • 2 x 120g punnets raspberries
  • 2 limes, rind finely grated
  • 80ml (1/3 cup) coconut cream
Instructions:
  • Chill a 26 x 16cm metal slice pan in the freezer.
  • In a small saucepan over medium-high heat, stir together water and sugar until the sugar dissolves. Allow the mixture to cool completely before using.
  • Pour the sweetened mixture into the pan, allowing it to solidify in the freezer for 4-5 hours. Then, use a fork to flake the mixture into delightful crystals.
  • Mash raspberries with lime rind, fold into granita mixture, then freeze until firm. Scrape into crystals using a fork, divide into bowls, and drizzle with coconut cream.
