Raspberry Brûlée

Quickly broiled fresh raspberries in a luxurious vanilla cream sauce.
Ingredients:
  • 1/3 cup sugar
  • 2 cups fat-free half-and-half or fat-free (skim) milk
Instructions:
  • Distribute raspberries evenly in the bottom of four 10-ounce custard cups or ramekins.
  • In a 2-quart saucepan, blend sugar, cornstarch, and salt. Add half-and-half and bring to a gentle boil over medium heat, stirring often. Mix in vanilla and pour over fresh raspberries.
  • Preheat your oven to broil. Sprinkle 1 teaspoon of brown sugar over the mixture in each custard cup. Broil the custards 4 to 6 inches from the heat for 2 to 3 minutes, or until the brown sugar has melted. Serve right away. Any leftovers can be covered and stored in the refrigerator.
