Quick and delicious raspberry crème pudding, ready in 25 minutes for a delightful dessert.
Ingredients:
  • 1 cup raspberries
  • 1/3 cup granulated sugar
  • 2 tablespoons cornstarch
  • 1/4 teaspoon salt
  • 2 cups fat-free (skim) milk, soymilk or fat-free half-and-half
  • 1/2 teaspoon vanilla
  • 4 teaspoons packed brown sugar
Instructions:
  • Evenly distribute raspberries among 4 (10-oz) custard cups or ramekins. In a 2-quart saucepan, combine granulated sugar, cornstarch, salt, and milk. Bring to a boil over medium heat, stirring often. Add vanilla extract, then pour mixture over the raspberries.
  • Preheat broiler. Sprinkle 1 teaspoon of brown sugar over each custard cup. Broil 4 to 6 inches from heat for 2 to 3 minutes until brown sugar is melted. Serve immediately and store covered in the refrigerator.
