Indulge in velvety burnt custard perfection with a crackling sugar crust.
Ingredients:
  • 2 x 500g ctns Premium Vanilla Custard
  • 215g (1 cup) caster sugar
  • 125ml (1/2 cup) water
  • Strawberries, washed, hulled, quartered, to serve
  • Blueberries, to serve
Instructions:
  • Spoon the custard into four 250ml (1-cup) capacity heatproof dishes or one 1.25L (5-cup) capacity heatproof dish. Smooth the surface with the back of a spoon, cover with plastic wrap, and chill in the fridge.
  • In a small saucepan over low heat, combine sugar and water. Stir until sugar dissolves. Increase heat to high and bring to a boil. Let it cook for 12 minutes without stirring, occasionally brushing down the pan's sides with a pastry brush dipped in water, until light golden. Remove from heat and set aside until bubbles subside. Gently pour a thin layer of the sugar mixture over the custard. Allow the toffee to set for 15 minutes. Serve the custards with the berries.
