Delicious creme brulee with caramelized sugar topping. Use kitchen torch or broiler for best results.
Ingredients:
  • 2 cups heavy cream
  • 3 egg yolks
  • 4 tablespoons white sugar
Instructions:
  • Preheat the oven to 300°F (150°C) and place a damp kitchen cloth at the bottom of a large baking pan.
  • Place a large pot of water on high heat until boiling. Meanwhile, in a saucepan over medium heat, mix together cream, 1/4 cup of sugar, and salt. Let it cook for 4 to 5 minutes, stirring occasionally until steam starts rising. In a medium bowl, whisk together egg yolks and vanilla until smooth. Gradually pour the hot cream into the yolks while stirring constantly. Once fully combined, distribute the mixture into four 6 oz. ramekins.
  • Set the ramekins on a towel inside a baking dish on the oven rack. Carefully pour boiling water into the dish, ensuring it reaches halfway up the sides of the ramekins. Loosely cover the entire pan with foil.
  • Bake in the preheated oven for 25 to 30 minutes until the custard is gently set. Then, refrigerate the ramekins for 4 to 6 hours to chill.
  • Sprinkle each custard with a tablespoon of sugar and caramelize the top using a kitchen torch or oven broiler for 2 to 3 minutes before serving.
